We present a home-style interpretation of a beverage from the seasonal cocktail list. It's a party-sized pre-mixed that is packed full of flavours associated with Christmas time, rendering it perfect for hosting a celebration. Reserve the remaining citrus syrup to use in brunch beverages, puddings, or to make another batch of the drink.
Bikini Recipe
Serves 10 servings
To make the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
For the Premix (produces 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
For the Citrus Syrup: Combine the listed items in a saucepan, heat until it reaches a light boil, mixing until the sugar dissolves. Next, turn off the stove allowing it to reach room temperature fully. Pour to a sterilised bottle, seal and store in the refrigerator, where it will keep for about a month.
Preparing the Premix: Mix the specified liquids into one sizeable container, allow it to infuse for 60 minutes, then filter it preferably using a fine cloth, to ensure it's completely strained.
For serving: Pour 85ml of your batch mix into a cocktail shaker filled with ice, gently stirring carefully for one minute to cool it down. Pour to a chilled martini glass or a similar vessel, top with the cranberries and complete it with a brief mist of mandarin oil over the drink.
